We had a wonderful Thanksgiving here at The Pigeon Coop but it’s time to start cooking actual food again. We made it through almost an entire week on Thanksgiving leftovers and a few quick freezer meals. Our bellies are happy thanks to the many wonderful family members who cooked for us this year.
With Clay Pigeon going back to work and Lis headed back to school, I’m easing back into the whole dinner game. These recipes are all very easy and can be thrown together quickly, even when a toddler is hanging onto your pant leg.

I’m pretty excited about this week’s line up. I haven’t been feeling all that well thanks to a stubborn cough so 30 minute meals are just the ticket. Now if I can just remember to pull the meat out the night before, I will be golden! For whatever reason, forgetting to pull the meat out seems to be my downfall.
