This past week has been freezing! God bless my husband and all the other men and women who work outside for a living. I know I sure as heck couldn’t do it! Even though next week is going to be a touch warmer, it’s not going to be warm by any means. Through the winter months, I like to make some good, hearty soups for dinner.
Good and hearty in our house means they need to be delicious and filling. If I even think about making something like Minestrone, I have to make a whole dinner to go with it because that will never keep my husband’s appetite satisfied! Now don’t get me wrong, I absolutely love those light and tasty soups, but the man who is making the bacon needs something to keep his belly happy.
Slow Cooker Broccoli and Cheese Soup from Well Plated by Erin
Broccoli cheese soup is one of my favorites and this one really hits the spot. It is thick and creamy and warms you from the inside out.
Clean Eating Chicken Chili from Bewitchin Kitchen
This soup is so quick to make and it’s delicious. I will say though that I add a healthy portion of red pepper seeds to give it some heat!
Chicken Enchilada Soup from Homemade by Holman
This soup has such a robust flavor and it’s one that just sticks to your bones. A must have on our coldest days.
Cheesy Potato Soup from Cuisine at Home
We seriously LOVE cream based soups here at The Pigeon Coop. Are they super healthy? Not really. Do I care? Absolutely not!
Creamy Parmesan Mushroom and Spinach Tortellini Soup from ClosetCooking
So…this is a unique but delicious recipe. Everyone at The Pigeon Coop loves mushrooms so it’s a win. And hey…add sausage! It takes it to a new level.
And damn it guys, I did it again. I wrote a Weekly Menu post while hungry. I really need to stop doing this. 11 o clock at night and I’m ready to start making one of these. Anyway, enjoy these delicious soups and try to keep warm! Thanks for stopping by again.
